Ingredients:
- 5 ounces - Garlic-and-herb flavor goat cheese
- 1 tablespoons - Fresh rosemary Finely chopped
- 1 tablespoons - Fresh parsley Finely chopped
- 1 tablespoons - Fresh thyme Finely chopped
- 2 tablespoons - Butter
- 1 - French baguette
- - Salt, to taste
- - Pepper, to taste
- - Lemon-flavored olive oil
Directions:
1. Using hands, form goat cheese into 1-in. balls. Roll in chopped herbs.
2. Place on platter covered w/ parchment paper. Pat balls down into a coin shape and refrigerate.
FOR CROSTINI:
1. Heat oven to 350. Melt butter. Slice baguette into 1/4-in. thick slices and use a 2-in round cookie cutter to cut them into small crostini.
2. Brush both sides of each slice w/ melted buttr and place on a cookie sheet. Sprinkle each slice with salt and pepper.
3. Bake for 15-20 min. until golden brown. Remove from oven and allow slices to cool.
TO ASSEMBLE: On a platter, arrange goat cheewe coins on top of crostini slices and drizzle w/ lemon-flavored olive oil.
