Ingredients:
- 1 cups - Ricotta
- 1 cups - Instant Potatoes
- 1 cups - Water Boiling
- 1 whole - Egg
- 2 1/2 cups - Flour
Directions:
Mix Instant Potatoes and Boiling Water. Cool, then add Ricotta. Place the Flour on a flat work surface or in a large mixing bowl. Make a well in the flour and add the Ricotta Potato mixture. Mix all together and form a ball. Rest for about 15 minutes with a damp paper towel covering the ball. Cut the ball into quarters. Covering 3 quarters with the damp towel. Cut the remaining quarter into 3 or 4 pieces. Roll one of the pieces into a long rope-like string, about an inch thick. Roll the remaining pieces, so you have 3 -4 long rope-like strings. Line the strings up next to each other and cut into 1 inch chunks. Roll your fingers into the chunks or use a fork.
