Ingredients:

  1. 2 tablespoons - dark brown sugar
  2. 2 tablespoons - flour
  3. 1 tablespoons - butter softened
  4. - pinch cinnamon
  5. - pinch salt (optional)
  6. 1 tablespoons - butter softened
  7. 1/2 - egg 1 egg, lightly beaten & divided
  8. 2 tablespoons - sour cream
  9. 1 tablespoons - dark brown sugar
  10. 1 teaspoons - maple syrup
  11. - vanilla a few drops
  12. 1/4 cups - self-rising flour
  13. 1/4 teaspoons - cinnamon
  14. 1 teaspoons - apricot or other preserves

Directions:

Crumb topping: mix ingredients together in small bowl with your fingers. Pinch together until crumbs form.

Cake: Mix butter and sugar together in large measuring cup until creamy; add egg, sour cream, syrup, and vanilla. Beat until blended well. Add flour and cinnamon; beat until smooth. Pour half the batter into a buttered coffee cup. Crop preserves into center, then top with remaining batter. Top with crumb topping. Microwave about 1 minute 15 seconds.
