Ginger and Spring Onion Stir-Fry

Ingredients:

  1. 9 ounces - dried egg noodles
  2. - Fry Light spray
  3. 10 - spring onions roughly chopped
  4. 2 cloves - garlic crushed
  5. 1 - red pepper deseeded, sliced
  6. 7 ounces - baby sweetcorn halved lengthwise
  7. 1/2 - inch piece fresh root ginger grated
  8. 4 tablespoons - dark soy sauce

Directions:

1. Prepare the egg noodles according to package directions; drain and set aside until required.

2. Meanwhile, spray a pan with Fry Light and fry the spring onions, garlic, red pepper, sweetcorn and ginger for 6-8 minutes.

3. Add the cooked noodles to the pan along with the soy sauce. Toss to mix well and stir-fry for another 1-2 minutes. Divide between four warmed bowls and serve.
