Ingredients:
- 10 slices - Bacon
- 2 pounds - New potatoes (about 6 medium) Unpeeled
- 1 whole - Small red onion
- 1 whole - Egg
- 1/2 cups - Sugar
- 1 tablespoons - Flour
- 1/2 teaspoons - Dry mustard
- 1/2 teaspoons - Salt
- 1/3 cups - Water
- 1/3 cups - White wine vinegar
- - Salt, to taste
- - Pepper, to taste
Directions:
1. Cook bacon until crisp. Drain and crumble 7 slices, reserving reamaining bacon for garnish.
2. Cook potatoes in boiling water until just tender, about 30 min. Drain. When cool enough to handle, cut into 1/2-in. cubes. Thinly slice onion; separate into rings and add to potatoes w/ crumbled bacon.
3. In a saucepan, slightly beat egg; add sugar, flour, dry mustard, salt , water and vinegar and cook over medium heat, stirring until mixture thickens, about 4 min. Pour over potatoes; mix well and season w/ salt and pepper.
4. Cool, cover and chill at least 4 hours. Before serving, garnish w/ reserved bacon, crumbled.
