Use ONLY room temperature eggs and milk thus allowing it to "puff" up while baking. To maintain somewhat of the "puffiness"...Serve immediately!

Ingredients:
- 3 tablespoons - bread flour
- 1/2 teaspoons - salt
- 1/2 tablespoons - sugar optional
- 2 - eggs room temperature only
- 6 tablespoons - milk room temperature only
- 1 tablespoons - butter if doing individual servings...melt a tidbit of butter in each baking dish...brush or wipe to coat surface
Directions:
Mix flour, salt and sugar. Beat eggs: add dry ingredients. Beat batter for 5 minutes. Add milk; beat 5 minutes. Melt and heat butter in baking dish or skillet and place in 425-degree oven for 6 minutes. Reduce heat to 350 degrees and bake 15 minutes longer.
SERVE IMMEDIATELY
Spread w/melted butter and confectioners sugar and sprinkle w/lemon juice.
(or maple syrup or spread w/favorite preserves)
Can be doubled, tripled, etc.
