Gazpacho with black beans

Ingredients:

  1. 4 cups - Tomato juice
  2. 1 cans - Black Olives Cut them in half if large
  3. 1 tablespoons - Olive Oil or Avocado Oil
  4. 3 cloves - Garlic pressed
  5. 1 - Bell Pepper diced
  6. 1 bunches - Green Onion chopped fine
  7. 6 ribs - Celery diced
  8. 1 - Tomato chopped small
  9. 1 1/2 cups - Beans black or navy
  10. 1/3 cups - Red Wine Vinegar
  11. 1 1/2 teaspoons - Thyme
  12. 1 teaspoons - Cumin
  13. 1/2 teaspoons - Sea Salt
  14. 1/2 teaspoons - Black Pepper
  15. 2 - Avocado cubed

Directions:

Mix all ingredients together in a large bowl and refrigerate for 3 hours or more to chill and meld flavors before serving.
