Garlicky Mushrooms and Spinach

Ingredients:

  1. 1 tablespoons - olive oil
  2. 1 - onion sliced
  3. 8 ounces - mushrooms sliced
  4. 2 cloves - garlic minced
  5. 2 tablespoons - soy sauce
  6. 2 cups - spinach roughly chopped
  7. - salt and pepper to taste
  8. 2 tablespoons - pine nuts toasted
  9. 1 tablespoons - olive oil
  10. 1 - onion sliced
  11. 8 ounces - mushrooms sliced
  12. 2 cloves - garlic minced
  13. 2 tablespoons - soy sauce
  14. 2 cups - spinach roughly chopped
  15. - salt and pepper to taste
  16. 2 tablespoons - pine nuts toasted

Directions:

1. Heat oil in a skillet or pan. Add mushrooms along with onions and fry for about 3 minutes on high heat or until beginning to get golden-brown.
2. Add minced garlic and roast for 30 seconds longer. Then add soy sauce and spinach and cook for 1-2 minutes or until spinach is wilted. Season with salt and pepper to taste.
3. Toast pine nuts in a small pan without oil until lightly browned.
