Garlic Shrimp Pasta

Ingredients:

  1. 8 ounces - Angel Hair Pasta
  2. 4 cups - Baby Spinach Leaves
  3. 1 1/2 cups - Cherry Tomatoes halved
  4. 3 teaspoons - Olive Oil divided
  5. 1 - Medium Onion finely chopped
  6. 1 1/2 pounds - Medium Shrimp peeled, deveined and tails removed
  7. 3 cloves - Garlic finely chopped
  8. 1/4 teaspoons - Crushed Red Pepper Flakes
  9. 1/2 cups - Dry White Wine
  10. 1/4 cups - Reduced-sodium Chicken Broth
  11. 1/4 teaspoons - Salt
  12. 1/8 teaspoons - Pepper
  13. 3 tablespoons - Parsley chopped
  14. 2 tablespoons - Butter

  20. 1 1/2 pounds - Medium Shrimp peeled, deveined and tails removed

  23. 1/2 cups - Dry White Wine
  24. 1/4 cups - Reduced-sodium Chicken Broth
  25. 1/4 teaspoons - Salt
  26. 1/8 teaspoons - Pepper
  27. 3 tablespoons - Parsley chopped
  28. 2 tablespoons - Butter

Directions:

In 5 quart saucepan, cook pasta as directed, drain and return to saucepan
Stir in spinach, tomatoes and 2 tsp of oil

While pasta is cooking, in nonstick skillet, heat remaining 1 tsp oil over medium-high heat
Add onion and cook (1 minute)
Add shrimp, garlic and pepper flakes and cook (2 minutes)
Stir in wine, broth, salt and pepper and cook until shrimp are pink and firm (2 minutes)
Remove from heat and stir in parsley and butter until butter is melted

Add shrimp mixture to pasta mixture in saucepan and toss to mix
