Garden Vegetable soup

Ingredients:

  1. 1/2 cups - sliced carrots
  2. 1/4 cups - diced onions
  3. 2 - minced garlic cloves
  4. 3 cups - fat-free beef, chicken or vegetable broth
  5. 1 cups - diced green cabbage
  6. 1 cups - chopped spinach
  7. 1 tablespoons - tomato paste
  8. 1/2 teaspoons - dried basil
  9. 1/4 teaspoons - dried oregano
  10. 1/4 teaspoons - salt
  11. 1 cups - diced zucchini

Directions:

Spray a large saucepan with nonstick cooking spray, heat. Saute the carrot, onion, and garlic over low heat until softened, about 5 ins. Add broth, cabbage, spinach, tomato paste, basil, oregano, and salt; bring to a boil. Reduce heat; simmer, covered, about 15 mins. Stir in the zucchini, and cook 3-4 mins more. Serve hot.
