Keep this as an "S" Snack or dessert by having 2-3 cookies (if you use 1/2 coconut or all coconut in place of rolled oats, you can have 3-4 cookies and stay in "S" territory).

Ingredients:
- 1/4 cups - butter or coconut oil
- 2 tablespoons - cocoa
- 2 tablespoons - almond milk, unsweetened
- 1/4 cups - Truvia
- 1/4 cups - defatted peanut flour
- 2 tablespoons - water
- 1 dashes - sea salt
- 1/2 teaspoons - vanilla
- 1 cups - rolled oats OR shredded coconut OR use 1/2 cup of each
Directions:
In a small saucepan over medium heat, melt butter or coconut oil, cocoa, almond milk, Truvia, defatted peanut flour, water and sea salt.
Bring to a boil and allow to boil, stirring constantly, for one minute.
Remove from heat and stir in vanilla and oats/coconut.
Drop by tablespoons (I used a small cookie scoop) onto aluminum foil.
Refrigerate to harden, then store in a covered container in the refrigerator.
