    Be sure to chop the maraschino cherries and let them dry on the counter overnight so their juice will not make the fudge runny. The fudge can be frozen for up to a month before thawing in fridge for serving.

Ingredients:

  1. 3 cups - sugar
  2. 3/4 cups - margarine
  3. 2/3 cups - evaporated milk
  4. 2 cups - semisweet chocolate chips
  5. 1 jars - marshmallow creme (7 oz. jar)
  6. 1 teaspoons - vanilla extract
  7. 1 cups - chopped nuts optional
  8. 1 cups - dried and chopped maraschino cherries optional

Directions:

If using the maraschino cherries, drain them well, chop them, and then let them dry on paper towels on the counter for a few hours or overnight, so the syrup will not make the fudge runny.

For fudge, combine sugar, margarine and milk in a saucepan. Bring to a rolling boil, stirring constantly (this could take 15 minutes or so). Boil for 5 minutes over medium heat, stirring constantly.

Remove from heat and stir in chocolate chips to melt. Stir in marshmallow creme until well combined; add chopped nuts, cherries, and vanilla. Mix thoroughly.

Pour into a buttered (or aluminum foil lined) 9"x13" pan. Cool until set (a couple of hours or overnight - or put in fridge or freezer for an hour to speed up the process) and cut into squares to serve.

Does best when stored in the fridge; can be frozen, separated by layers of wax paper, and kept for a month or more. Thaw in fridge for 8-24 hours before serving (thawing on counter at room temperature can cause fudge to become too soft).
