Fruit Muffins

Ingredients:

  1. 3/4 cups - dried apricots
  2. 2 cups - rolled oats
  3. 1/2 cups - chopped pecans optional
  4. 3 cups - fresh or frozen blueberries
  5. 2 cups - whole wheat flour
  6. 1/2 teaspoons - salt

Directions:

Reconstitute apricots in water and save the apricot liquid. Chop the apricots with the blueberries. Stir in the remaining ingredients with the chopped fruit. If extra liquid is needed, add the apricot water. Put in muffin tins and bake at 350 degrees for about 30 minutes or until firm to touch.
