Ingredients:
- 2 cups - light raisins
- 1 cups - citron
- 1 cups - lemon peel candied
- 1 cups - orange peel candied
- 1/2 cups - pineapple candied
- 1 cups - cherries (red or green or both)
- 1 cups - nuts (pecans)
- 4 cups - flour
- 1/2 teaspoons - salt
- 2 teaspoons - baking powder
- 1 cups - butter
- 2 cups - sugar
- 6 - eggs
- 1 teaspoons - vanilla
- 1 cups - orange or pineapple juice
Directions:
Mix together raisins, citron, lemon peel, orange peel, pineapple, cherries and nuts with the flour, salt and baking powder.
Cream together butter and sugar; stir in eggs, vanilla and fruit juice. Mix into flour and fruit mixture.
Line pans with foil. Put roaster pan of water in oven on lower rack while baking.
Bake at 300 degrees F for 1-1/2 hours. Refrigerate or freeze.
