Ingredients:
- 1 bags - Frontier Soups South of the Border Tortilla Soup
- 1 pounds - boneless/skinless chicken
- 6 cups - gluten-free chicken stock (I use Wildtree's bouillon to make mine)
- 1 cups - water
- 1 jars - 16 oz organic pineapple salsa
- 1/2 teaspoons - salt
- 1/2 teaspoons - pepper
- 1/2 teaspoons - garlic salt
- - Cheese
- - Tortilla strips
- - Sour cream
- - Avocado
Directions:
Mix together your salt, pepper and garlic salt, sprinkle over the chicken breasts and roast in 425 degree oven for 25-30 minutes (check for doneness). Cut into ½” cubes and set aside. (**note, you could skip this step and just put a rotisserie chicken from the grocery store and shred the meat, or use leftover chicken).
Bring chicken stock and water to a rolling boil, add the chicken, soup mix and salsa. Now it is time to wait! Allow to simmer for approximately 25 minutes. Serve over tortilla strips and top with cheese, sour cream and a slice of avocado.
