Fresh Salmon Burgers

Ingredients:

  1. 4 whole - HEB Salmon Burgers, from Seafood counter, uncooked
  2. 1 cups - Fresh Mango or Pineapple Pico de Gallo Drained
  3. 1/2 cups - Reduced-calorie mayonnaise
  4. 1 tablespoons - Stone-ground mustard
  5. 4 slices - Monterey Jack cheese
  6. 1 whole - Lrg. Avocado Cut into thin slices
  7. 4 whole - Sandwich thins or Kaiser rolls
  8. whole - Leaf lettuce or spinach, optional

Directions:

1. Cook salmon burgers according to directions on label. Top w/ cheese after turning to second side.

2. Heat bread, if desired. Combine pico de gallo w/ mayonnaise & mustard; spread mixture over cut sides of rolls or sandwich thins. Place salmon patties, topped w/ avocado slices in between "buns"; add lettuce or spinach, as desired. Press together gently & serve.
