Ingredients:
- 1 1/2 tablespoons - cornstarch
- 1/4 cups - brown sugar firmly packed
- 1/2 cups - water
- 4 cups - fresh peaches peeled, sliced
- 1 tablespoons - butter
- 1 tablespoons - lemon juice
- 1/2 teaspoons - ground cinnamon
- 1 cups - flour
- 1 tablespoons - sugar
- 1 1/2 teaspoons - baking powder
- 1/4 teaspoons - salt
- 1/4 cups - butter
- 1/4 cups - milk
- 1 - egg slightly beaten
Directions:
For peach filling, mix cornstarch, brown sugar and water in a large pan. Add peaches and cook on low-medium heat until mixture is thickened (about 15 minutes). Add butter, lemon juice, and cinnamon; then pour peach mixture into a baking dish.
For batter topping, sift together flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Mix together milk and egg, then add this wet mixture to the dry mixture all at once. Stir just 'til moistened.
Drop spoonfuls of the batter topping over the hot peach mixture (it should spread evenly as it bakes). Bake in a hot oven at 400 degrees for about 40 minutes.
