Ingredients:
- 2 1/4 pounds - fresh tomatoes cored, cut into 2-inch pieces
- 1 cups - chicken stock
- 3 tablespoons - unsalted butter
- 1/2 cups - packed fresh basil leaves chopped
- 1/2 cups - torn fresh parsley
- 1/4 cups - olive oil
- 5 cloves - garlic smashed and peeled
- 1 1/2 teaspoons - salt
- 1 1/2 teaspoons - freshly cracked black pepper
Directions:
In a 5-quart pot combine tomatoes, stock and butter. Bring to boiling, then reduce heat. Cover and simmer for 10 to 15 minutes or until tomatoes have softened. Use a kitchen utensil (wooden spoon or masher) to coarsely mash the tomatoes.
Add remaining ingredients and bring to boiling; reduce heat. Boil gently, uncovered, for 40 to 45 minutes or until desired consistency, stirring occasionally.
If desired, use an immersion blender to blend sauce until desired texture (or cool slightly and blend, in batches, in blender).
Serve over hot cooked pasta.
