Fresh Corn Salad

Ingredients:

  1. 5 - Ears of Corn shucked
  2. 1/2 cups - Red onion small diced
  3. 3 tablespoons - Cider Vinegar
  4. 3 tablespoons - Olive Oil
  5. 1/2 teaspoons - Kosher Salt
  6. 1/2 teaspoons - Ground Black Pepper
  7. 1/2 cups - Fresh Basil Leaves julienned

Directions:

Cook corn for 3 minutes in large pot of boiling salted water. Drain and immerse in ice water. When the corn is cool, cut the kernels off the cobb.

Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Serve cold or at room temperature.
