Fresh Apple Cake

Ingredients:

  1. 2 cups - sugar
  2. 1 1/2 cups - salad oil
  3. 1 teaspoons - vanilla
  4. 2 - eggs
  5. 2 1/2 cups - all-purpose flour
  6. 2 teaspoons - baking powder
  7. 1 teaspoons - baking soda
  8. 1 teaspoons - salt
  9. 3 cups - chopped, peeled apples
  10. 1 cups - chopped pecans

Directions:

Preheat oven to 350 degrees F.

In a large bowl, combine sugar, oil, vanilla and eggs; beat well.

In another bowl, sift together flour, baking powder, baking soda and salt. Add to sugar mixture, blending well.

Fold in the apples and pecans. Pour batter into a greased and floured 12-cup fluted tube pan (or Bundt pan).

Bake for 1 hour or until done. Let cool in pan for 5 minutes. Remove from pan and allow to cool completely on a wire rack.
