Ingredients:
- 1 teaspoons - cinnamon
- 1 cups - pecans chopped
- 1/2 cups - raisins optional
- 2 cups - sugar
- 1 1/4 cups - cooking oil
- 2 - eggs
- 2 teaspoons - vanilla
- 3 cups - apples diced
- 3 cups - flour
- 1 teaspoons - salt
- 1 teaspoons - baking soda
Directions:
Mix together sugar, oil, eggs, and vanilla and blend well. Stir in diced apples.
In a separate bowl, combine flour, salt, baking soda, and cinnamon. Mix dry ingredients into wet ingredients until well combined; makes a stiff batter.
Add pecans and raisins, if desired.
Bake in greased and flourd 9x13-inch pan at 350° F for 30-40 minutes (sometimes up to an hour -- test for doneness with toothpick).
