Fresh Apple Cake

Ingredients:

  1. 1 teaspoons - cinnamon
  2. 1 cups - pecans chopped
  3. 1/2 cups - raisins optional
  4. 2 cups - sugar
  5. 1 1/4 cups - cooking oil
  6. 2 - eggs
  7. 2 teaspoons - vanilla
  8. 3 cups - apples diced
  9. 3 cups - flour
  10. 1 teaspoons - salt
  11. 1 teaspoons - baking soda

Directions:

Mix together sugar, oil, eggs, and vanilla and blend well. Stir in diced apples.
In a separate bowl, combine flour, salt, baking soda, and cinnamon. Mix dry ingredients into wet ingredients until well combined; makes a stiff batter.
Add pecans and raisins, if desired.
Bake in greased and flourd 9x13-inch pan at 350° F for 30-40 minutes (sometimes up to an hour -- test for doneness with toothpick).
