Ingredients:
- 2 cups - Sugar
- 1/2 cups - Oil
- 2 whole - Eggs
- 2 teaspoons - Cinnamon
- 1/2 teaspoons - Nutmeg
- 2 cups - Flour
- 2 teaspoons - Baking Soda
- 2 teaspoons - Baking Powder
- 1 teaspoons - Salt
- 4 cups - Peeled Apples finely chopped or shredded
- 1 teaspoons - Vanilla
- 1 cups - Pecans chopped
- 8 - cream cheese
- 3 tablespoons - butter
- 2 cups - confectioners' sugar
- 1 teaspoons - vanilla
- 1 pinchs - salt
Directions:
In mixer, combine sugar, oil, eggs, cinnamon, and nutmeg. Gradually add flour, baking soda, salt, and baking powder. Batter will be very stiff. At low speed, add apples and vanilla. Batter will soften. Add pecans. Bake in greased 9x13 inch pan at 350° for 45 minutes.
Cream Cheese Frosting:
Soften cream cheese and butter. Mix with sugar, vanilla, and pinch of salt until smooth. Spread on hot cake in pan. Sprinkle chopped pecans on top.
