Ingredients:
- 8 ounces - cream cheese at room temp.
- 1/2 cups - chopped walnuts
- 2 teaspoons - vanilla
- 16 slices - firm white bread
- 1 cups - half and half
- 3 - large eggs
- - freshly grated nutmeg
- 1/4 sticks - butter
- 2 tablespoons - vegetable oil
- - sliced bananans, strawberries, and oranges for serving with
- 1 jars - 18 oz. apricot preserves
- 1/2 cups - fresh orange juice
Directions:
Mix together cream cheese, walnuts and half of vanilla in a small bowl. Spread mixture over 8 of the bread slices, and top with other 8 slices of bread (to form sandwiches).
Whisk together half and half, eggs, nutmeg, and other half of vanilla in a pie pan.
Melt 1 tablespoon of butter and 1 tablespoon of oil on griddle over medium heat. Dip sandwiches into egg mixture and brown on griddle; add remaining butter and oil as needed.
Transfer to a warm platter; cut into quarters and top with fruit slices. Serve with syrup.
Apricot Orange Syrup:
Combine apricot preserves with orange juice and bring to a boil, stirring constantly until thickened.
