    Filling may seem a little runny at first, but once it's done it thickens up as it cools. Defrost bags in fridge overnight or use microwave defrost mode.

Ingredients:

  1. 7 pounds - apples granny smith apples hold up well in baking
  2. 1 - lemon zested and juiced
  3. 1 cups - white sugar
  4. 1 cups - brown sugar
  5. 1 cups - corn starch
  6. 1 tablespoons - cinnamon
  7. 1/4 teaspoons - nutmeg
  8. 1/2 teaspoons - salt
  9. 6 cups - water

Directions:

1. Set aside zest and juice from lemon.

2. Peel and slice apples thickly. Using an apple slicer to speed up the job, apples will be sliced into about 8 slices each. Toss apple slices with lemon juice and zest and set aside.

3. In a large saucepan, combine sugars, corn starch, cinnamon, nutmeg, salt and water. Bring to a boil while whisking over medium-high heat and let boil 2 minutes until thick and bubbly. Stir in apple slices and cover.

4. Reduce heat to low and let simmer for 10 minutes or until apples begin to soften (they do not have to be completely cooked). Remove from heat and cover. Let cool about 30 or 40 minutes, checking periodically (apples should be soft, but not mushy).

5. Ladle equal amounts of filling into 4 or 5 freezer bags. If you want the bags to be about the same size as a can of apple pie filling (around 21 oz.), put approximately 2-1/2 cups of filling into each bag.

6. Let cool on the counter and then freeze for up to one year.
