Ingredients:
- 12 slices - bacon chopped
- 2 1/2 pounds - Italian sasages
- 1 - large onion chopped
- 1 teaspoons - thyme
- 1 teaspoons - rosemary
- 1 1/2 pounds - rotini pasta
- 2 - large carrots sliced
- 1 bunches - broccoli cut into floretes
- 1 packages - 6.5 oz. garlic and herb cheese at room temperature
- 1/2 cups - whipping cream
- 1 cups - chicken stock
- 2 cups - grated Monterey Jack cheese
- 1 1/2 cups - crumbled blue cheese (6 oz.)
- 1 cans - 28 oz. Italian plum tomatoes drained, chopped
- 1 cups - grated Parmesan cheese
- - salt and pepper
Directions:
Cook bacon; remove from pan and set aside. Add sausages, and brown (pouring off all but 3 tablespoons of drippings). Set sausage aside. Add onion and seasonings.
Cook pasta in boiling water for 4 minutes. Add carrots and cook 2 minutes. Add broccoli and cook 2 minutes. Drain.
Whisk the herb cream and cream together; stir in stock. Add pasta mixture, bacon, onion and herbs, Monterey Jack cheese, blue cheese, tomatoes and 1/2 cup of Parmesan.
Cut sausages on diagonal in 1-inch slices; add to mixture. Season with salt and pepper.
Toss. Pour into greased casserole. Sprinkle with remaining Parmesan and bake at 350 degrees F for 40 minutes.
