Four Bean Salad

Ingredients:

  1. 1/4 cups - cooked black beans canned are okay
  2. 1/4 cups - cooked red kidney beans canned are okay
  3. 1/2 cups - frozen string beans
  4. 1/4 cups - cooked soybeans
  5. 2 tablespoons - chopped green onions
  6. 4 tablespoons - chopped yellow onions
  7. 1/2 - yellow pepper chopped
  8. 1/2 cups - cooked rotini noodles
  9. 1/2 tablespoons - extra virgin olive oil
  10. 1/2 tablespoons - unsweetened orange juice concentrate
  11. 1/4 teaspoons - salt
  12. 1 cups - raw spinach for serving salad on

Directions:

1. Combine salad ingredients in mixing bowl; toss to mix.

2. In small bowl, combine sauce ingredients; whisk together.

3. Pour sauce over salad and toss until all ingredients are well coated.

4. Place salad on a bed of spinach for serving.
