Ingredients:
- 3/4 cups - coconut flour (Bob's Red Mill preferably)
- 1 cups - tapioca starch
- 3/4 teaspoons - baking soda
- 3/4 teaspoons - salt
- 1 teaspoons - gelatin (Great Lakes red can preferably)
- 5 tablespoons - olive oil OR avocado oil
- 3/4 cups - to 1 cup coconut milk watered down slightly
Directions:
Mix together the flour, starch, baking soda, salt and gelatin (it doesn't need to bloom in water first).
Stir in the milk (slightly watered down) and oil together and mix until a soft dough forms.
Roll or pat dough into small balls or into one large baguette shape (as desired), flattening slightly (if you like); place those on a cookie sheet and bake at 375 degrees F until golden and crusty (about 10 to 20 minutes - depending on oven and size of biscuits or baguette).
These also freeze well if you want to make larger quantities at once.
