Flourless Chocolate Cake

Ingredients:

  1. 7 ounces - really good (45-50% cocoa) semisweet chocolate
  2. 3/4 cups - butter
  3. 1 cups - sugar divided
  4. 4 - eggs separated
  5. - powdered sugar, fresh berries optional, for topping

Directions:

Preheat oven to 300° F.

In a double boiler (or in a microwave-safe bowl in the microwave) melt chocolate and butter.

Stir together half of the sugar and all the egg yolks; add to melted chocolate.

Using electric mixer, beat the egg whites; slowly add remaining half of sugar and continue to beat until stiff peaks form. Gently fold this mixture into the chocolate.

Pour into a greased 9-inch cake pan. Bake for 40 minutes or until toothpick inserted in center comes out with just a few crumbs on it.

Cool for 30 minutes (preferably on a cooling rack) before removing from pan. Dust with powdered sugar and top with berries, if desired.
