Ingredients:
- 2 tablespoons - Honey
- 2 whole - Onions peeled and sliced
- 2 teaspoons - Salt
- - 1 inch of Ginger peeled and sliced
- 4 cloves - Garlic
- 2 teaspoons - Chili Powder
- 1 tablespoons - Curry Powder
- 1 teaspoons - Turmeric Powder
- 1 pounds - Boneless Chicken cut into 1-inch cubes
- - Vegetable Oil for frying
- 5 sprigs - Curry Leaves can substitute basil
Directions:
1) Blend honey, onions, salt, and spices into a paste. Rub all over chicken. Let marinate at least 2 hours.
2) Heat oil over medium-high heat, deep-fry chicken until crispy and cooked through, about 3 minutes per piece. Work in batches, making sure not to overcrowd the pan.
3) Drain cooked cubes on paper-towel-lined plate, sprinkle with salt, to taste, and garnish with a few torn curry (or basil) leaves.
4) Serve individually on toothpicks, or stack two or three together on skewers.
