Ingredients:
- 20 - whitefish fillets rise & pat dry
- 1/4 teaspoons - salt
- 1/8 teaspoons - black pepper
- 1 tablespoons - olive oil
- 1/4 cups - shallots chopped
- 2 tablespoons - capers drained
- 2 teaspoons - lemon peel shredded & divided
- 1/2 cups - dry white wine
- 1 tablespoons - fresh oregano
Directions:
-Pre-heat oven to 450°. Line a baking pan with foil. Arrange four 5-ounce whitefish fillets in a single layer in pan. Sprinkle with salt and black pepper. Bake for 10 to 12 minutes or until fish flakes easily.
-While fish is baking:
In a skillet heat olive oil over medium-high heat. Add shallots; cook and stir 3 minutes. Stir in capers and 1/2 lemon peel. Add dry white wine and cook, uncovered for 4 minutes or until wine is nearly evapoated.
- Remove from heat. Stir in fresh oregano. Spoon caper mixture over fish and sprinkle
with remaining lemon peel.
