Fish Tacos

Ingredients:

  1. 1 1/2 lbs - Cod

Directions:

Spice mix:

▢ 1 tablespoon chilli powder
▢ ½ teaspoon cumin
▢ ½ teaspoon garlic powder
▢ 1 teaspoon paprika
▢ ½ teaspoon salt
▢ ½ teaspoon pepper
▢ 1 teaspoon oregano
▢ ½ teaspoon onion powder

Preheat oven to 400.

Mix spice mix. Pour over fish and 1 tbsp or so of olive oil over fish. Marinate up to 15 minutes.

Place fish on a baking sheet with parchment. Bake for 15 minutes.

Yogurt Sauce:

3 garlic cloves
½ medium jalapeño, seeds and inner stems removed - subbed chipotle chili powder
1 cup lightly packed cilantro leaves and tender stems
1 ½ cups Greek yogurt (2% fat content or higher) - subbed small portion Mayo
1 tablespoon lime juice
½ teaspoon honey
Salt and freshly ground black pepper
