Firecracker Chicken Noodle Lettuce Wraps

Ingredients:

  1. 6 ounces - dried thin rice noodles (mai fun) or angel hair pasta cooked according to package directions
  2. 22 leaves - Bibb or Boston lettuce (2-3 heads)
  3. 5 - grilled chicken thighs cut into bite-size pieces
  4. 1 1/2 cups - grated carrots
  5. 1/3 cups - roasted peanuts chopped
  6. 22 sprigs - fresh herbs (mint, cilantro and/or basil)
  7. 1 cups - sweet Thai chile sauce (or other favorite dipping sauce)

Directions:

Divide pasta into 20-24 individual nest-like portions or chop coarsely. Transfer sauces to small bowls.

On platter, arrange noodles, lettuce, chicken, carrots, peanuts, herbs and sauces. Let diners build their own wraps by filling lettuce leaves with noodles, chicken, carrots, peanuts and herbs. Spoon sauce over top.

Refrigerate any leftovers.
