Fideo (Spanish Pasta)

Ingredients:

  1. 2 tablespoons - lard
  2. 2 cups - crushed vermicelli noodles
  3. 3 cups - beef broth
  4. 1 1/2 cups - water
  5. 3 tablespoons - tomato puree
  6. 1/3 cups - tomato sauce
  7. 1 1/2 teaspoons - garlic powder
  8. 3/4 teaspoons - black pepper
  9. 1 - fresh tomato diced
  10. 1 - small onion diced
  11. 1 - bell pepper diced
  12. 1 cups - diced carrots
  13. 3/4 cups - frozen peas thawed

Directions:

Heat lard in deep skillet or Dutch oven until almost smoking. Brown vermicelli in lard.

Add all other ingredients except bell pepper, carrot and peas; bring to a boil and let simmer for 25 minutes.

Add bell pepper and carrot and simmer 20 minutes longer. Stir in peas just before serving.
