Fettuccine (or Noodles) with Mushrooms

Ingredients:

  1. 1/2 cups - freshly grated Parmesan cheese
  2. 3/4 cups - heavy cream
  3. 5 tablespoons - butter divided
  4. 1 teaspoons - salt
  5. - freshly ground pepper to taste
  6. 12 ounces - fettuccine uncooked
  7. 1/2 pounds - mushrooms
  8. - squeeze of lemon juice

Directions:

Place Parmesan, cream, 3 tablespoons of the butter, salt and pepper in a warm bowl (keep warm). (Imperative! Place ingredients in bowl Before adding pasta).

Cook pasta al dente.

Meanwhile, saute mushrooms in 2 tablespoons of butter rapidly; add a squeeze of lemon juice and salt.

Mix mushrooms with pasta, and add to other ingredients. Toss quickly.

Serve with additional Parmesan.
