Ingredients:
- 1/2 cups - freshly grated Parmesan cheese
- 3/4 cups - heavy cream
- 5 tablespoons - butter divided
- 1 teaspoons - salt
- - freshly ground pepper to taste
- 12 ounces - fettuccine uncooked
- 1/2 pounds - mushrooms
- - squeeze of lemon juice
Directions:
Place Parmesan, cream, 3 tablespoons of the butter, salt and pepper in a warm bowl (keep warm). (Imperative! Place ingredients in bowl Before adding pasta).
Cook pasta al dente.
Meanwhile, saute mushrooms in 2 tablespoons of butter rapidly; add a squeeze of lemon juice and salt.
Mix mushrooms with pasta, and add to other ingredients. Toss quickly.
Serve with additional Parmesan.
