Ingredients:
- 4 - skinless, boneless chicken breasts cut into 1/2-inch strips
- - flour, salt and pepper
- 1/2 sticks - butter
- 1 - red bell pepper cut julienne style
- 1 - yellow bell pepper cut julienne style
- 1 - small onion thinly sliced
- 1 - tomato chopped
- 2 tablespoons - fresh lime juice
- 1 tablespoons - grated lime peel
- 1 pieces - 1-inch fresh ginger peeled, minced
- 3 - medium cloves of garlic minced
- 1/4 teaspoons - dried red pepper flakes
- 1/4 cups - dark rum
- - Cilantro Butter recipe below
- 12 ounces - fettuccine cooked, drained
- 1 1/2 sticks - unsalted butter at room temperature
- 1/2 cups - cilantro leaves
- 2 - shallots
Directions:
For Cilantro Butter:
Puree butter, cilantro and shallots in blender; transfer to container for use in recipe below.
Chicken and Vegetables:
Dredge chicken in seasoned flour and saute in 1/4 cup butter. Add peppers, onion, tomato, lime juice and peel, ginger, garlic, and pepper flakes. Stir and cook for 3 to 4 minutes.
Pour rum into skillet, heat and ignite with match. Reduce heat, add cilantro butter, stir and blend.
Pour chicken mixture over cooked fettuccine. Toss and serve.
