Fettuccine Caribbean Style

Ingredients:

  1. 4 - skinless, boneless chicken breasts cut into 1/2-inch strips
  2. - flour, salt and pepper
  3. 1/2 sticks - butter
  4. 1 - red bell pepper cut julienne style
  5. 1 - yellow bell pepper cut julienne style
  6. 1 - small onion thinly sliced
  7. 1 - tomato chopped
  8. 2 tablespoons - fresh lime juice
  9. 1 tablespoons - grated lime peel
  10. 1 pieces - 1-inch fresh ginger peeled, minced
  11. 3 - medium cloves of garlic minced
  12. 1/4 teaspoons - dried red pepper flakes
  13. 1/4 cups - dark rum
  14. - Cilantro Butter recipe below
  15. 12 ounces - fettuccine cooked, drained
  16. 1 1/2 sticks - unsalted butter at room temperature
  17. 1/2 cups - cilantro leaves
  18. 2 - shallots

Directions:

For Cilantro Butter:
Puree butter, cilantro and shallots in blender; transfer to container for use in recipe below.

Chicken and Vegetables:

Dredge chicken in seasoned flour and saute in 1/4 cup butter. Add peppers, onion, tomato, lime juice and peel, ginger, garlic, and pepper flakes. Stir and cook for 3 to 4 minutes.

Pour rum into skillet, heat and ignite with match. Reduce heat, add cilantro butter, stir and blend.

Pour chicken mixture over cooked fettuccine. Toss and serve.
