Fettuccine & Butternut Squash in Brown Butter Sage Sauce

Ingredients:

  1. 2 cups - Butternut Squash diced
  2. - Salt and Pepper to taste
  3. 1 teaspoons - Butter
  4. 3 - Shallots sliced
  5. 2 teaspoons - Fresh Sage chopped
  6. 1/2 teaspoons - Minced Garlic
  7. 1 tablespoons - Chicken Broth
  8. 1 teaspoons - Lemon Juice
  9. 1 packages - Fettuccine noodles cooked following instructions
  10. 1 tablespoons - Parmesan Cheese
  11. 2 cups - Butternut Squash diced
  12. - Salt and Pepper to taste
  13. 1 teaspoons - Butter
  14. 3 - Shallots sliced
  15. 2 teaspoons - Fresh Sage chopped
  16. 1/2 teaspoons - Minced Garlic
  17. 1 tablespoons - Chicken Broth
  18. 1 teaspoons - Lemon Juice
  19. 1 packages - Fettuccine noodles cooked following instructions
  20. 1 tablespoons - Parmesan Cheese

Directions:

Preheat oven to 450°F and line a baking pan with parchment paper. Spread squash over parchment and spray lightly with cooking spray. Season with salt and pepper and roast for 25 minutes, stirring once, or until golden. While squash roasts melt butter in a small skillet over low heat; add shallots and cook for 10-15 minutes or until soft and lightly brown. Stir in sage and garlic and cook for 1 minute. Add chicken broth, lemon juice, Skinny Pasta Fettuccine, and roasted squash. Toss to combine and serve garnished with Parmesan cheese and pepper.
