Fennel and Meyer Lemon Salad

Ingredients:

  1. 1 whole - Meyer Lemon Cut in half
  2. 3 tablespoons - Extra virgin olive oil
  3. - Salt & Pepper
  4. 1/2 bulbs - Fennel Cored & very thinly sliced
  5. 1 packages - 5-0z. Baby Arugula
  6. - Shaved Parmesan cheese

Directions:

1. Whisk juice of 1/2 Meyer lemon and 3 T. olive oil in a large bowl; season w/ salt and pepper.
2. Add 1/2 bulb fennel, cored and very thinly sliced; pkg. baby arugula and 1/2 thinly sliced Meyer lemon. Toss and season with salt and pepper.
3. Top with shaved Parmesan cheese and serve.
