* Besan flour is also known as chick pea flour. Other gluten free flour choices are fine and if gluten free isn’t an issue you can use wheat flour.

Ingredients:
- 6 - Medium Potatoes Peeled & grated
- 1 - small onion finely chopped
- 1/4 cups - Apple Cider Vinegar
- 1/2 cups - Besan Flour *
- 1 teaspoons - Salt
- 2 teaspoons - Black Pepper
- 1 1/2 cups - Canola or Peanut oil
- 1 cups - nut milk or soy milk
- 2 tablespoons - Cassava Flour (or Cornstarch)
- 1 teaspoons - Garlic Powder
Directions:
Place peeled potatoes in a bowl of cold water while you chop the onions. Coarsely grate the potatoes into a large bowl and let sit for 5 to 10 minutes, then squeeze out excess liquid using some cheese cloth or kitchen towel. Return potatoes to bowl and add onions, garlic powder, flour, salt and pepper. Combine vinegar, nut milk, and cornstarch. Mix well then stir into potato onion mixture.
Heat oil in a large skillet (or two if you've doubled the recipe) over medium to high heat. Using a large spoon drop latke batter into hot oil (about 1/4 cup of batter per latke). Flatten and shape with back of the spoon so they are about 1/2 inch thick and pancake shaped. Fry until edges appear browned then flip to fry the other side. When cooked they should be golden brown on both sides. Remove to paper towel lined tray and keep warm in low oven till serving.
Serve warm with applesauce and sour cream on top or on the side.
