Farmers' Market Ratatouille

Ingredients:

  1. - Zucchini
  2. - Onion
  3. - Tomatoes
  4. - Yellow Bell Pepper
  5. - Red Bell Pepper
  6. - Green Beans cooked
  7. - Extra Virgin Olive Oil
  8. - Salt
  9. - White Balsamic
  10. - Parsley

Directions:

Dice the zucchini, onions, tomatoes and bell peppers. Cut the green beans into pieces. Saute the onions in extra virgin olive oil until just soft. Add the peppers and saute for a few seconds. Add the zucchini and green beans and saute about two more minutes. Turn off the heat and add the tomatoes, you don't want to cook them too much. Salt to taste and add a drizzle of white balsamic.
