Farmers' Market Pasta

Ingredients:

  1. - Your favorite pasta
  2. 1 packages - Dried mushrooms re-hydrated
  3. - Garlic flavored olive oil
  4. - Pepper Oil
  5. 1 - Small Onion chopped
  6. 1 cups - Asparagus or Green Beans cut
  7. 1 cups - Caulifloweretes
  8. 1 - Yellow squash sliced
  9. 1 - Red or Green Pepper sliced
  10. 1 cups - Carrots sliced or shredded
  11. 2 - Tomatoes coarsely chopped
  12. 3 tablespoons - Flat Parsley finely chopped
  13. 1/3 cups - Parmigiano Reggiano grated

Directions:

Cook pasta "al-dente." Re-hydrate mushrooms. Coat frying pan with garlic flavored olive oil. Add a few drops of the pepper oil to taste. Saute onion 2-3 min. Add mushrooms, and cook 2 min. Add asparagus/green beans, cauliflowerets, squash, pepper and carrots. Cover and cook 3-4 min. Add tomatoes and salt and pepper, cook 1 min.

Serve over pasta. Top with parsley and Parmigiano.
