Ingredients:
- - Your favorite pasta
- 1 packages - Dried mushrooms re-hydrated
- - Garlic flavored olive oil
- - Pepper Oil
- 1 - Small Onion chopped
- 1 cups - Asparagus or Green Beans cut
- 1 cups - Caulifloweretes
- 1 - Yellow squash sliced
- 1 - Red or Green Pepper sliced
- 1 cups - Carrots sliced or shredded
- 2 - Tomatoes coarsely chopped
- 3 tablespoons - Flat Parsley finely chopped
- 1/3 cups - Parmigiano Reggiano grated
Directions:
Cook pasta "al-dente." Re-hydrate mushrooms. Coat frying pan with garlic flavored olive oil. Add a few drops of the pepper oil to taste. Saute onion 2-3 min. Add mushrooms, and cook 2 min. Add asparagus/green beans, cauliflowerets, squash, pepper and carrots. Cover and cook 3-4 min. Add tomatoes and salt and pepper, cook 1 min.
Serve over pasta. Top with parsley and Parmigiano.
