Farm Burger's Kale Slaw

Ingredients:

  1. 2 cups - mayonnaise (Duke's is preferred)
  2. 2 tablespoons - apple cider vinegar
  3. 2 tablespoons - red wine vinegar
  4. 1 teaspoons - lemon juice
  5. 1 teaspoons - pickled jalapeno juice
  6. 1 1/2 teaspoons - celery seeds
  7. 1 teaspoons - sugar
  8. 12 ounces - curly kale (about 12 cups) washed, stems removed, chopped
  9. 2 - carrots (about 1 cup shredded) peeled and grated on a box grater
  10. 1 - red onion (about 1-1/2 cups) julienned
  11. - salt to taste

Directions:

In a medium bowl, whisk together mayonnaise, apple cider vinegar, red wine vinegar, lemon juice, jalapeno juice, celery seeds and sugar. (This dressing may be made ahead and refrigerated.)

In a large bowl, combine kale, carrots and onion. Add dressing and toss until vegetables are coated with dressing. Taste for seasoning, adding more salt if needed.
May be made up to 3 hours in advance.

Keep refrigerated until ready to serve. Makes 6 cups.
