Fabulous Low-Cal White Bean Soup

Ingredients:

  1. 2 - large carrots sliced
  2. 1 - medium onion chopped
  3. 2 stalks - celery sliced
  4. 1 teaspoons - dried oregano
  5. 1 teaspoons - dried thyme
  6. 2 teaspoons - extra-virgin olive oil
  7. 1 bunches - kale washed, stems removed, chopped
  8. 1 cans - 14.5 oz. diced tomatoes
  9. 1 cans - 15 oz. white beans (navy beans)
  10. 4 cups - fat-free, low-sodium chicken stock or vegetable broth

Directions:

Sauté carrots, onion, and celery for 5 minutes in oil over medium heat in Dutch oven.

Add oregano and thyme and cook for 2 minutes.

Add kale, canned tomatoes and broth. Bring to a boil; reduce heat and add beans.

Simmer for 20 minutes.
