Ethiopian-Style Tofu Scramble

Ingredients:

  1. 12 ounces - Extra firm tofu Mashed
  2. 1/2 whole - Onion Diced
  3. 1 whole - Tomato Diced
  4. 3 whole - Small jalapenos Diced
  5. 3 tablespoons - Nutritional yeast
  6. 1 teaspoons - Onion powder
  7. 1 teaspoons - Garlic powder
  8. 1 teaspoons - Tumeric
  9. 1 teaspoons - Salt

Directions:

1. Dice the onions, tomatoes, and jalapenos
2. Heat olive oil in a large nonstick pan over medium heat
3. Add the diced onion and cook until softened (~5 min). Add the tomatoes and jalapenos and cook for another 3-4 min.
4. Add the onion powder, garlic powder, turmeric, salt, and nutritional yeast
5. Add the tofu and stir until everything is well combined. Cook until all the spices have been absorbed into the tofu (~5 min). Add a little water if necessary.
6. Remove from heat and enjoy!
