Eggplant and Tomato

Ingredients:

  1. 1 - large eggplant
  2. 1 cans - 10 oz. tomatoes & chilies drained slightly
  3. 15 - saltine crackers crushed
  4. 1 cups - grated cheddar cheese

Directions:

Peel and slice eggplant. Boil for 8 to 10 minutes. Drain and mash.

Stir in tomatoes and chilies, saltines, and 3/4 of the cheese.

Put in greased baking dish. Cover with remaining cheese.

Bake at 350 degrees F for 30 minutes.
