Notes:
Variations: 1. Cook some ground beef & stir in to make a one dish meal. 2. Stir the Cheddar cheese into mixture & put Mozzarella Cheese on top. 3. Serve with Garlic Cheese Toast & Fruit (I like - applesauce).

Ingredients:
- 2 - Medium Eggplants Peeled,
- 1/2 cups - Butter
- 3/4 cups - Slivered Almonds
- 1 - Medium Onion finely chopped
- 1/4 cups - Chopped Parsley
- 3/4 cups - Cracker or bread crumbs
- 2 - Eggs
- 2 tablespoons - Milk
- 1 cups - Grated Cheddar Cheese
- - Salt & Pepper to taste
Directions:
1. Preheat oven to 400 degrees F. Grease 1 quart casserole or square baking dish.
2. Cut peeled eggplant into 2" cubes. Bring to boiling in salted water (about 1 cup water). Cover & simmer for 15 mins. or until tender.
3. Drain; turn into mixing bowl; mash & beat until fluffy.
4. Melt butter in skillet; saute almonds until a light gold. Remove only almonds & set aside.
5. Add onion to remaining butter in skillet; cook over low heat for 5 mins. Stir in parsley & crumbs. Remove from heat; stir into eggplant.
6. In mixing bowl beat eggs & milk; stir into eggplant mixture. Add almond; add salt & pepper; mix well. Turn into casserole; sprinkle with cheese
7. Bake in preheated oven for 30 mins.
