Ingredients:

  1. 6 - eggs
  2. 1 teaspoons - salt
  3. 4 tablespoons - oil
  4. 1/2 - medium onion chopped
  5. 4 - water chestnuts
  6. 1/2 pounds - shrimp (1 can)
  7. 1/2 cans - bean sprouts

Directions:

Beat eggs together with salt.

Heat skillet or wok very hot. Add 2 tablespoons of oil and the onions and water chestnuts; stir fry for 2 minutes.

Add shrimp; stir fry for 1 minute. Cover, reduce heat to medium and cook for 3 minutes. Allow to cool.

Add to eggs and mix well in bowl; also add bean sprouts.

Clean skillet and heat to very hot again. Add the other two tablespoons of oil. Spoon 3 tablespoons of egg mixture into oil. Fry until crisp, about 2 minutes. Flip over with a pancake turner and brown the other side for 2 minutes.

Cook just one portion at a time and keep in oven until all are done.
