Egg Casserole

Ingredients:

  1. 1 dozen - Eggs beaten
  2. 3 cloves - Garlic minced
  3. - Salt & pepper to taste
  4. 1 cups - Parmesan cheese shredded
  5. 8 ounces - Baby Bella mushrooms sliced
  6. 6 ounces - Frozen Spinach chopped, defrosted
  7. 4 ounces - Goat Cheese crumbled

Directions:

Grease 9 x 13 casserole dish
Lay in bottom: mushrooms, spinach and crumble goat cheese
Beat eggs, garlic, salt & pepper and pour on top of veggies
Sprinkle parmesan cheese on top
Bake at 350 for 40-45 minutes
