egg and vegetable muffins

Ingredients:

  1. 8 - eggs beaten
  2. 2 - bell peppers chopped
  3. 1 - onion chopped
  4. 10 - fresh mushrooms sliced
  5. 2 cups - baby spinach roughly chopped
  6. 2 cloves - garlic minced
  7. - olive oil
  8. - sea salt
  9. - ground pepper

Directions:

Preheat oven to 350. Heat olive oil in skillet placed over a med-high heat. Cook that onion, bell peppers, and garlic until soft and fragrant, about 5 mins. Add the mushrooms and spinach and cook for another 2-3 mins. Season everything to taste. Whisk the eggs together in a big bowl, and add the bell peppers and spinach mixture. Grease a muffin tin and pour the mixture evenly into the muffin cups. Place in the oven and bake for 20-25 mins.
