Easy Strawberry Pie (Like Shoney’s and Frisch’s)

Ingredients:

  1. 1 - refrigerated pie crust
  2. 2 cups - sliced strawberries
  3. 2 1/2 tablespoons - cornstarch
  4. 1 1/4 cups - sugar
  5. 1 1/2 cups - water
  6. 1 boxes - strawberry gelatin (like Jell-O)
  7. - whipped cream optional, for serving

Directions:

Preheat oven to 350 degrees F. Place pie crust in a pan and crimp edges. Use a fork to poke holes in bottom. Bake for 15-18 minutes until edges are browned. Allow to cool.

Layer bottom with sliced strawberries. Stir together water, sugar and cornstarch and bring to a boil. Simmer, stirring constantly, until thickened.

Remove from heat; add Jell-O and stir until dissolved. Pour mixture over strawberries.

Refrigerate until set. You can decorate with whipped cream before serving.
