Easy Coconut Pie

Ingredients:

  1. 1/4 - recipe of Jim's Majic Pie Dough OR 1 refrigerated pie crust
  2. 2 cups - sweetened flaked coconut
  3. 2 cups - milk
  4. 1 cups - sugar
  5. 3 - jumbo eggs
  6. 1 - large egg
  7. 1 tablespoons - coconut extract
  8. 1/4 cups - butter melted

Directions:

1. Preheat oven to 350 degrees F.

2. Roll out pie dough and place in a 10-inch deep dish pie plate. Trim and crimp dough edge. Place coconut in prepared pie plate; set aside.

3. In the container of a blender, combine milk, sugar, eggs and coconut extract. Blend until smooth. Add butter. Blend for 1 minute. Immediately pour mixture over coconut in prepared pie plate.

4. Bake on bottom rack until set, 50 to 60 minutes. If the top begins to brown too much, place a tent-shaped piece of foil on top of pie.

5. Let pie cool on cooling rack; serve at room temperature or cold.
